Healthy & Delicious Green Soup Recipe

This is a recipe I’ve used for many years now, and it is SUCH a tasty dish. 

Credit for this has to go to my gorgeous client Emma - a woman who over the past few years has undertaken the most epic journey into eating richly nutritious food. I am unbelievably proud of her.

If you’re looking for a meal packed full of vitamins but won’t accept anything less than delicious you won’t be disappointed! 

NB - I’ve made some carnivorous changes to add protein to this vegan recipe. 

 

Ingredients

  • A dash of olive oil

  • 1 red apple, chopped

  • 1 head of broccoli florets

  • 1 medium courgette, chopped

  • 200g frozen peas

  • 2 cups fresh kale

  • 500ml hot water

  • Chicken stock (or quatre-epices if you’re vegetarian)

  • 2 venison sausages chopped into small chunks (obvs skip if you’re veggie)

  • Small handful chopped almonds

(2 servings)

 

You'll also need

  • Hob

  • Large saucepan

  • Frying pan

  • Stick blender or food processor

  • Measuring jug

  • Sharp knife

 

Method

  1. Heat your olive oil in the saucepan, and get it ready to fry;

  2. Add the apple, broccoli, courgette, frozen peas and kale;

  3. Pour the hot water over these, and add the chicken stock;

  4. Whilst allowing the veg to soften, get your sausages cooking in the frying pan;

  5. As the sausages cook, add the almonds to the pan and give them a stir;

  6. Blend the cooked vegetable mixture;

  7. Serve with a topping of the cooked sausage and nut mixture.

 

... Et voila! A delicious and nutritious dish that’s simple to make.
